Ingredients

4 thin boneless, skinless chicken breasts

Salt and pepper to taste

1/4 cup flour

2 tablespoons extra-virgin olive oil

1/2 cup honey

1/3 cup chicken broth

1 tablespoon red wine vinegar

1 tablespoon soy sauce

1 tablespoon ketchup

2 teaspoons minced garlic

2 tablespoons butter

Directions

Season chicken breasts with salt and pepper. Dust each side with flour. In a skillet, heat olive oil over medium heat, and sear chicken breasts for 3 minutes per side. In a medium bowl, whisk together honey, chicken broth, red wine vinegar, soy sauce, ketchup, garlic and butter. Pour over chicken. Cover and reduce heat to medium-low for 10 minutes or until chicken breasts are done. Serve with rice or mashed potatoes.
