Ingredients
- 1/2 cup orange juice
- 3 tablespoons lime juice
- 1 tablespoon olive oil
- 1 tablespoon molasses
- 1 medium garlic clove minced
- 1 teaspoon ginger grated
- 1/4 teaspoon crushed red pepper
- 1 pork tenderloin 1-2 pounds
- Optional vegetables such as peppers onion and mushrooms

Instructions
- In a large bowl or plastic zipper bag, combine first seven ingredients to make marinade.
- Cut pork into 1-inch cubes.
- Add pork to marinade and soak several hours or overnight.
- Heat grill.
- Thread pork and veggies on to skewers (I like to do meat and veggies separately, as they cook for different times).
- Grill over medium heat, turning occasionally, 6-8 minutes or until desired doneness.
- Remove from heat and cover tightly to retain moisture until ready to serve.
Recipe Notes
This is delicious served with jasmine rice tossed with cilantro, salt and orange juice!
