Fried Green Tomatoes
  1. Salt and pepper the sliced tomatoes, dust lightly with flour.
  2. Dip in eggs, letting excess drip off, then coat well with meal or crumbs.
  3. Fry in hot grease or oil until browned, turning gently (about three minutes on each side).
  4. Keep warm in a low oven, 200 or 250, if frying in batches.
