Instructions
  1. Heat oven to 350.
  2. In a large bowl, whisk together first six ingredients.
  3. In a separate medium bowl, combine eggs, milk, coconut oil, lemon juice and lemon extract.
  4. Stir egg mixture into dry ingredients until combined.
  5. Stir in zucchini, poppy seeds and lemon peel until combined.
  6. Evenly pour mixture into 2 greased 9x5-inch loaf pans.
  7. Bake about 1 hour or until knife comes out clean from center.
  8. Cool before cutting.
