  1. Bring the water to a boil. Add quinoa, cover and cook on low-medium heat for 12-14 minutes. Taste to see if finished. Place in flat pan to chill quickly. Makes 3 cups.
  2. Mix all other ingredients thoroughly with quinoa. Serve cool.
