Yummy Pumpkin Muffins
  1. Heat oven to 350.
  2. Spray a dozen 2 ½ inch muffin cups with non-stick cooking spray, set aside.
  3. In medium bowl stir cake mix to break up any large pieces.
  4. Stir in pumpkin and egg product just until combined. Spoon batter into prepared muffin cups.
  5. Bake 30 minutes, or until wooden toothpick near center comes out clean.
  6. Cool in muffin cups on wire rack 5 minutes.
  7. Remove from muffin cups.
  8. Sprinkle with powdered sugar, if desired.
  9. Serve warm or cool.
