Reader Recipes: Let’s “taco bout” Cinco de Mayo!

Kelly’s Taco Casserole

  • Cooking spray
  • 1 (2-pound) bag frozen tater tots
  • 2 pounds ground beef
  • 1 onion, diced
  • 2  (1-ounce) packages taco seasoning
  • 8 ounces sour cream
  • 2 (16-ounce) cans refried beans
  • Choice of cheese, shredded
  • Crushed tortilla chips (I use taco-flavored Doritos)
  • Favorite taco toppings (optional garnish)

Heat oven to 350.

Spray large baking dish with cooking spray. Add layer of frozen tater tots. In a skillet, cook beef and onion together until browned, draining grease. Stir in taco seasoning. Stir in sour cream. Add beans, and mix well. Spread meat mixture on tater tots. Cover with cheese. Cover dish with foil.

Bake for about 50 minutes. Remove foil, and sprinkle with tortilla chips; top with additional cheese, if desired. Return to oven for up to 5 more minutes or until cheese melts. Serve hot with favorite taco toppings.

Notes: I made this one Easter as an alternative to our traditional dinner. We had about 20 people, and there was nothing left.

Jalapeño Pie

  • 1 (12-ounce) jar sliced jalapeño peppers, plain or candied, drained
  • 12 ounces sharp cheddar cheese, shredded
  • 4 large eggs, beaten
  • Salt and pepper to taste

Heat oven to 350.

Line a 9-inch glass pie pan (bottom and sides) with jalapeños. Loosely pack cheese on top. To eggs, add salt and pepper, and pour on to cheese. Bake for 30 minutes or until fully set.

Notes: Use 16 ounces of jalapeños, 16 ounces of cheese and 5 eggs if using a 10 1/2-inch (or deep-dish) pie plate. Good served hot or cold. Folks, it don’t get any easier than this!

Mexican Chicken & Rice

  • Cooking spray
  • 1 cup rice, cooked
  • 3-4 chicken breasts, cooked and diced
  • 1 (16-ounce) jar picante sauce
    (I use Pace)
  • 1 (8-ounce) package cream cheese
  • Jack or cheddar cheese, grated

Heat oven to 350. Coat large baking dish with cooking spray. Add layer of rice to bottom of dish. Top evenly with chicken and picante sauce. Add dabs of cream cheese, and sprinkle with grated cheese.

Bake for 30-35 minutes.
