Halloween goodies give guests ‘pumpkin’ to talk about!

Frankenstein Guacamole

Makes 4 servings.

  • 2 large avocados
  • 2 teaspoons fresh lime juice
  • 1/2  teaspoon salt or to taste
  • 1 clove garlic, chopped
  • 1/2 teaspoon ground cumin
  • 1/4 cup cilantro, chopped
  • 1/3 cup white onion, minced
  • Black tortilla chips
  • Black olives
  • Red bell pepper or roasted red pepper slices
  • Canned beans

Place avocados, lime juice, salt, garlic, cumin, cilantro and onion in a food processor. Pulse until smooth. Spread guacamole on a plate in a rectangular shape, leaving some space at the top for hair. Use black tortilla chips as hair. Use red bell pepper/roasted red pepper slices to make scars on face. Use black olives for eyes and nose and canned beans (or other desired ingredients) for a mouth. Serve with additional black tortilla chips for dipping.

 

 

Halloween Chocolate Bark

Makes 12-15 servings.

  • 1  (24-ounce) package chocolate almond bark
  •  Zest from 2 large oranges
  • 1 (.88-ounce) package candy eyeballs (see note)
  • 2/3 cup macadamia nuts, chopped

 

Spread parchment or wax paper on a baking sheet, and set aside.

Melt chocolate almond bark according to package directions. As soon as it melts, spread it with a spatula on parchment/wax paper. Sprinkle orange zest evenly on chocolate. Strategically place eyeballs. Top with macadamia nuts. Cool until hard. Break into pieces, and store leftovers in an airtight container.

Note: Substitute orange sprinkles or another Halloween candy if you can’t find eyeballs.

Jack-O’-Lantern Pimento Cheese Ball

Makes 6-8 servings.

  • 1  (8-ounce) package cream cheese, softened
  • 1/3 cup jarred pimentos, drained
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4  teaspoon salt
  • 1/4 teaspoon onion salt
  • 1/4 cup mayonnaise
  • 3 cups shredded cheddar cheese, divided
  • 2 green onions, chopped
  • 1 bell pepper stem
  • Black olives
  • Red bell pepper strips
  • Crackers

Place cream cheese, pimentos, garlic powder, smoked paprika, salt, onion salt, mayonnaise, 2 cups of cheddar cheese and green onions in a food processor. Pulse until combined. Form mixture into a ball, using remaining cheese to form into shape of a pumpkin. Wrap in plastic wrap, and refrigerate for 2 hours or overnight. Before serving, poke a hole in top, and insert bell pepper stem. Make a face with black olives and roasted red pepper strips (or other desired ingredients) or leave plain. Allow ball to sit on counter for 30 minutes before serving with crackers.
