Ingredients
- 1 eggplant chopped and cooked, or 1frozen eggplant
- 1 can chopped tomatoes undrained
- 1 can Ro-tel tomatoes undrained
- 1 onion chopped
- 1 package ramen noodles broken into pieces
- cheddar cheese chunked,

Instructions
- Put all ingredients, except cheese, in a large pot and heat.
- Add chunked cheddar cheese to taste.
- Pour into buttered casserole dish and bake at 350 for about 45 minutes, until browned on top.
