Ingredients
2 pounds dried black-eyed peas (pre-soaking not required)
1/2 pound ham, diced
1/2 pound smoked sausage, sliced
1 large onion, diced
1 large red bell pepper, diced
1 large green bell pepper, diced
1 (10-ounce) can diced tomatoes and green chilies (like Rotel)
3 cloves garlic, minced
4 cups chicken or beef broth
1 tablespoon prepared spicy mustard
1 teaspoon salt
2 teaspoons black pepper, coarsely ground
1/2 cup cooked bacon, crumbled
Directions
Add all ingredients to a large soup pot. Bring to a boil, then simmer about 40 minutes or until everything is cooked through and tender.
