Ingredients
- 1 pound frozen meatballs
- 2 small potatoes peeled and diced
- 1 cup carrots sliced
- 1 cup celery sliced
- 1 cup frozen mixed vegetables
- 1 cup Kale thick spines removed, chopped
- 1 can diced tomatoes
- 1 32 oz carton beef broth

Instructions
- Put all the ingredients in a soup pan, cover and bring to a boil. Turn down heat and simmer for 1 hour.

Enjoy with cornbread or toasted bread. This recipe is very easy and versatile, as you can use any vegetables of your choice.
