Instructions
  1. Preheat oven to 350. Cook rice as directed on package, adding 1/2 package of taco seasoning to water. Brown beef, drain, and add remaining taco seasoning as directed on package. Combine seasoned beef,soup,and tomatoes with green chilies to rice and stir well. Line bottom of 9x13 inch baking dish with lightly crushed chips. Pour mixture over chips and top with cheese. Bake until cheese is melted, about 15 mins. Garnish with chopped green onion and tomatoes. Variations: Chicken may be substituted for ground beef.

Each year Arkansas County and surrounding counties hold a Miss Rice contest. The purpose of the contest is to promote interest in rice cookery and rice promotion among the youth in the rice producing areas of Arkansas, and to focus the attention of the general public of Arkansas (the largest growing rice state) on the importance of the rice industry to our states economy.
