Ingredients
1 (8-ounce) package cream cheese, softened
1 (4-ounce) jar diced pimentos, drained
1/2 cup mayonnaise
1/2 teaspoon garlic powder
1/4 teaspoon onion salt
1/4 teaspoon smoked paprika
2 2/3 cups shredded cheddar cheese, divided
1 cup canned corn, drained
1 (12-ounce) bag extra small shrimp, peeled and tails removed, thawed
Tortilla chips or baguette slices for serving
Directions
Heat oven to 400.
In a medium bowl, stir together cream cheese, pimentos, mayonnaise, garlic powder, onion salt and smoked paprika until well-combined. Stir in 2 cups cheddar cheese. Stir in corn and shrimp, and place in a casserole dish. Top with remaining cheese.
Bake for 15-20 minutes or until bubbling. Serve with tortilla chips or baguette slices.
