• 1/4 cup chicken broth
  • 1 onion, thinly sliced
  • 3 pounds boneless, skinless chicken thighs
  • Juice from 1 orange (reserve orange peel)
  • 1 1/2 tablespoons fresh lime juice (reserve lime peel)
  • 1 teaspoon soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon ground cumin
  • 2 teaspoons smoked paprika
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon oregano
  • 1 1/4 teaspoons garlic powder
  • Corn tortillas, cilantro, lime slices and salsa for serving


Place chicken broth in bottom of slow cooker. Add onion and chicken thighs, and top with orange juice, lime juice and soy sauce. Sprinkle chicken with brown sugar, cumin, smoked paprika, salt, oregano and garlic powder. Toss chicken so spices are evenly distributed. Place reserved orange peel and half the lime peel on top of chicken. Cover and cook for 4-6 hours on high or 6-8 hours on low. Discard orange and lime peels. Shred chicken with two forks. Serve on corn tortillas with cilantro, lime slices and salsa, if desired.
