Ingredients
Salad:
1 large head of iceberg lettuce, chopped
1/2 cup canned black beans, drained
2/3 cup canned corn, drained
1 avocado, chopped
1 small cucumber, sliced
1/4 cup cherry tomatoes
2 tablespoons red onion, chopped
2/3 cup shredded Mexican cheese
Tortilla chips for serving
Dressing:
1/4 cup light mayonnaise
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
1/4 cup salsa
Juice from half a lime
1 tablespoon water
Directions
For dressing: Stir together mayonnaise, cumin and paprika. Then add salsa, lime and water. If dressing is too thick for your liking, add another tablespoon of water.
For salad: Assemble the salad in layers, like a Cobb salad. Serve with tortilla chips and dressing.
