Ingredients

1/2 pound spaghetti, uncooked

1 (12-ounce) jar roasted red bell peppers, drained

1/2 cup almond slivers

2 teaspoons garlic, minced

2 ounces goat cheese, crumbled

1 teaspoon smoked paprika

1/2 teaspoon oregano

1 tablespoon tomato paste

1/4 cup extra-virgin olive oil

2 tablespoons water

Salt to taste

Directions

Cook spaghetti according to package directions.

While pasta cooks, place all other ingredients in a food processor, and pulse until mostly smooth. Transfer sauce to a large pan, and turn on low- to medium-low heat. When pasta is done, drain and transfer to pan with sauce. Toss to thoroughly coat, and serve immediately.

Note: This is vegetarian, but you can toss cooked chicken or shrimp with this dish if you want to add protein.
