1 (5.8-ounce ) box plain or chicken-flavored couscous

2 green onions, sliced

1/3 cup dried cranberries

1 cup dried apricots, sliced

2/3 cup cilantro, chopped

1/3 cup cashew halves





Cook couscous according to package directions, and fluff with fork. Stir in remaining ingredients. Toss to combine and serve.

Note: Makes a great side dish for pork, chicken or fish. This dish is also good with quinoa instead of couscous. Quinoa adds protein and makes it a complete meal — a great work lunch option. To substitute, start with 1 1/2 cups of uncooked quinoa, and cook according to package directions, using chicken or vegetable broth instead of water. Follow recipe from there.
