Ingredients
1 ripe banana
1 1/4 cups quick oats
3/4 cup dates, chopped
1/2 cup creamy peanut butter
1 teaspoon cinnamon
1 teaspoon vanilla extract
2 tablespoons shredded coconut, plus more for rolling
2 tablespoons honey
Directions
Place banana, oats, dates, peanut butter, cinnamon, vanilla extract, 2 tablespoons shredded coconut and honey in a food processor, and pulse until nearly smooth. Form mixture into small balls.
Add remaining shredded coconut to a shallow bowl. Roll balls in coconut, and place on baking sheet lined with parchment paper. Refrigerate for 30 minutes.
Note: These are great snacks or breakfast bites. They will keep for four days, refrigerated in a sealed container.
