Ingredients
1 pound ground beef
Salt and pepper to taste
1/2 cup onions, diced
1 cup beef broth
1 cup frozen mixed vegetables
2 large russet potatoes, peeled, cooked and mashed with butter
1/2 cup shredded cheese (optional)
Directions
Brown ground beef in a large skillet; season with salt and pepper to taste. Add onions and cook until translucent. Add beef broth and cook for 5 minutes; remove from heat.
Place mixed vegetables in a microwave-safe bowl, and cook for about 5 minutes.
Stir vegetables into beef mixture.
Add beef and vegetables to an oven-safe casserole dish. Spread mashed potatoes evenly on top. If using, sprinkle shredded cheese on top of potatoes.
Place dish under oven broiler until the top is golden brown.
