  • 1/2-3/4 pound ground Italian sausage, mild or spicy
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 64 ounces chicken or vegetable broth
  • 4 large red potatoes, sliced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper, optional
  • 1 bay leaf
  • Salt to taste
  • 4 cups kale, chopped with stems discarded
  • 2 (15.5-ounce) cans Great Northern beans, drained and rinsed


In a large pot, cook Italian sausage until brown; remove, drain grease and set aside.

To same pot, add oil over medium heat. Add onion and garlic, and sauté until softened, about 5 minutes. Add broth, potatoes, oregano, crushed red pepper, bay leaf and salt.  Bring to boil, reduce heat and simmer uncovered for about 30 minutes.

Stir in kale, beans and Italian sausage. Cook about 20 minutes. Remove bay leaf before serving.
