Ingredients
For Crust
- 1 cup flour
- 1 stick butter, softened
For Filling
- ¾ cup sugar
- 2 eggs
- 3 tablespoons lemon juice
- 2 tablespoons flour
- 1 teaspoon lemon zest
- ¼ teaspoon baking powder
For Garnish
- Powdered sugar
Directions
Heat oven to 350º. Grease an 8 by 8 pan, and set aside.
For crust: Combine flour and butter in a medium bowl (mixture will be crumbly). Press into bottom of prepared pan. Bake for 1 to 20 minutes, or until edges of crust are lightly browned.
For filling: Add all filling ingredients to a medium bowl, and beat with an electric mixer on low speed until well-combined. Pour lemon mixture on crust. Bake for 18 to 20 minutes, or until filling is set. Sprinkle with powdered sugar while warm. Allow to cool, and cut into bars.
