Ingredients

  • 1/2 cups cornmeal
  • 3/4 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 2/3 cup oil
  • 1 cup cream-style corn
  • 3/4 cup onion, minced
  • 1 medium bell pepper, diced
  • 1 cup buttermilk
  • 4 jalapeño peppers, diced
  • 1 cup grated cheese

Directions

  • Heat oven to 325.
  • In a large bowl, mix all ingredients together until
  • combined. Pour into a skillet or baking pan. Bake for 1 hour.
Note: This was my grandmother’s (Martha Garrison) recipe. She would have been 105 this year.
