• Nonstick cooking spray
  • 4-5 large chicken breasts
  • Salt and pepper to taste
  • 2 teaspoons Italian seasoning
  • 1 teaspoon thyme
  • 1 cup chicken broth
  • 1 cup Marsala wine
  • 1 tablespoon garlic, minced
  • 3 cups portobello mushrooms, sliced
  • 1 large onion, thinly sliced
  • Zucchini noodles or whole wheat pasta for serving


Heat oven to 400. Coat baking dish with nonstick cooking spray.

Sprinkle chicken breasts with salt, pepper, Italian seasoning and thyme. Place in prepared dish. Add chicken broth and Marsala wine to pan. Add garlic, mushrooms and onion.

Bake for 35-45 minutes, depending on thickness of chicken breasts. Serve with zucchini noodles or whole wheat pasta.
