For sauce

  • Nonstick cooking spray
  • 1 pound turkey Italian sausage, casings removed
  • 1/2 pound ground turkey
  • 1 teaspoon sage
  • 3/4 teaspoon salt
  • 1 large white onion, chopped
  • 1 tablespoon dried basil
  • 1 tablespoon oregano
  • 1 tablespoon sugar
  • 3 teaspoons garlic, minced
  • 1 (14.5-ounce) can tomato sauce
  • 1 (12-ounce) can tomato paste
  • 12 ounces water (use tomato paste can)

For zucchini noodles

  • 1 teaspoon extra-virgin olive oil
  • 3-4 large zucchini, shredded into noodles OR 3 (12-ounce) bags frozen zucchini noodles
  • 1/3 cup chicken broth
  • Salt and pepper to taste

For sauce: Spray a large pot with nonstick cooking spray. Turn heat on medium-high, and cook turkey sausage, ground turkey, sage, salt and onion until meat is cooked through. Drain grease. Add basil, oregano, sugar, garlic, tomato sauce, tomato paste and water. Stir to dissolve tomato paste, and thoroughly combine ingredients. Bring to a boil. Cover, reduce heat to low, and simmer for 1 hour, stirring occasionally.

For zucchini noodles: In a large skillet, heat olive oil until hot. Add zucchini noodles and chicken broth. Stir and cook about 5 minutes or until noodles reach desired consistency (add more broth or water if noodles start to stick). Add salt and pepper to taste before serving. Serve sauce over zucchini noodles.
