Ingredients

For Dressing

  • 3 tablespoons lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 2 large garlic cloves, minced
  • 1/4 teaspoon salt

For Salad

  • 4 cups romaine, chopped
  • 2/3 cup parsley, chopped
  • 2 cups cucumber, diced
  • 4 green onions, sliced
  • 2/3 cup cherry or grape tomatoes
  • 1/3 cup cilantro, sliced
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper

Directions

For dressing: Place dressing ingredients in a Mason jar, and shake until well-combined. This dressing is best made 2 hours in advance.

For salad: Add all salad ingredients to a large bowl; toss with salad dressing and serve.
